Also, you are trying to impress some existing master thief, or guild thereof? To do so, you need skill and daring, yes, but you also need discretion. Overreach, get caught (or at least identified), accumulate powerful enemies, and soon enough you're a walking joke like Hok. We have a lot of general purpose knowledge. We're skilled in reason, discourse, logic, resource management, economics, game theory, diplomacy, mathematics and the like.

Stuff like the specific geography of the town you happen to be in? I'm afraid we're reliant on you, there. Or whatever local resources you can tap (or we can help you tap).

Think of us like a skilled foreign dignitary, or a crafts-person outside of their workshop. We know a lot of stuff / have skills, but we can't use it all here, and we don't know everything about where we are.

How far does that go? Will any beast obey you, or do you need to build a relationship? What qualifies as a beast? You can talk to possums- what about birds? Snakes? Insects? Spiders?

Does this mean you can speak with any person, regardless of language barrier?

if you can talk to animals I say make a distraction with those birds their. Doesn't really matter what as long as they are a big enough bother that no one would notice you. Oh, a specific target, with a time limit? That's harder.

If we could go slow and steady you could basically guarantee setting up a system where we got the palace vermin slowly smuggling a steady stream of small stuff out for you. Less prep time and grabbing a bunch of relatively large (versus small animals) stuff at once is more challenging.

...a big priority, besides not getting caught, is not making it obvious how you did it, either. If your method gets out, it becomes less effective.

That gives you some interesting options. If you have the prep time to set it up, there's a lot of cool stuff you can do with spider silk. Plus, the insect world gives you access to a lot of potentially useful chemicals, and very unobtrusive scouting.

An easier short term goal might be to collect a few dangerous insects as panic buttons. A few bugs are easy to conceal on your person, and it would be a quick and unexpected way to deal with someone trying seriously to kill you, for instance. (An occupational hazard, if you're stealing from the rich and powerful).

...you could even get paid to collect useful bugs and/or animals, if you pose as an exterminator. (Just ask / order them to leave with you).

You called for us to advise you? Reconsider your medium-term plan of 'impressing' Rathalos. Seriously, even if you pull off some hot-shit pickpocketing of knick-knacks from royalty--despite their bodyguards, entourage and every security officer around being nervous for miles around--so what? You will only be worth a fraction as much to this Rathalos character as the value of what you do. A much smarter plan is to go achieve a more useful venture pursuing ends with higher fungible/useful value, and keep all your profits for yourself. If you're prosperous enough of a thief he'll be coming to talk to you, not the other way around. Further, I really don't suggest being a thief anyway because most people hate them with good reason.

Seriously, with talents like your animal control you could be peerless in S&R, scouting, spying, surveying, discreet courier work, grifting, assassination, and any number of fields with much higher status than base thievery. Please tell us more about yourself, your background, education, family, and such so we can do a better job of helping you find a job that sucks less than 'thief.'
